SEASON 2 - EPISODE 12:

"KOREAN VEGAN FOOD: KIMCHI-PANCAKE OR KIMCHIJEON"

 
In South Korea, kimchi-jeon is the popular name of the "pancakes" made using Kimchi, which are also known as Kimchi-buchimgae. Buchimgae is a broad Korean term for all the types of food that include a pan-fried batter mixed with other ingredients, that also includes the Jeon types, as these are a more specific type of Korean pancakes and ingredients.

In this episode we can see and learn how a Kimchi-pancake is made, which is very simple, as well as it seems to be very good and tasty. In Korea these types of hot pancakes are very appreciated in rainy days, where it's tradition to eat them with light alcohol beverages like Makgeolli or Dongdongju.

Makgeolli and Dongdongju are slightly sweet alcoholic beverages native to Korea, traditionally made from rice or wheat mixed with nuruk, a Korean fermentation starter. Normally they have a milky off-white color with about 6–8% of alcohol by volume. They are very similar to the rice fermentation technics that produce in Japan Amazake and Sake, in the first milky phases of the fermentation, with a similar low alcohol content and similar mild sweet taste.

Let's go to the recipe then:

RECIPE THREE: VEGAN KIMCHIJEON OR KIMCHI-PANCAKE RECIPE: 

MAIN INGREDIENTS: BATTER + FILLINGS:

1 cup all purpose flour
 1 cup Kimchi, cut into slices or small pieces
 1 cup of the Kimchi's natural fermented broth or brine
 • + Cold water (as needed for making the batter with a proper texture)
• 1 tsp brown sugar or your fav. sweetener (optional) 
• salt to taste (optional)
 
EXTRA FILLINGS (at taste):
 
 1-2 small scallions sliced (very common and optional)
½ red onion, finely chopped
• 1 garlic clove (optional)
 • ¼ green chili (optional)
  • 1 tablespoon sesame seeds (optional)

SIMPLIFIED STEP BY STEP HOW TO MAKE IT:

1- Prepare and slice the ingredients for the filling as the recipe or to your taste;
2- Add flour, kimchi's brine, and water for the batter;
3- Verify the seasonings;
4- In a hot non-sticky pan warm up 1 or 2 Tbs neutral oil;
5- Fry and cook the mix until finely soft and crispy;

Let it cool off a little bit, and enjoy....
