A TASTE OF JAPAN: THE ORIGINAL MINI-SERIES.

EPISODE 013 (Part 2): 

"FROZEN VEGAN SUSHI: SKETCHING-UP A CONCEPT AND A PRODUCT"

As in the last episode the idea of a possible existence of a commercial version of Frozen Vegan Salmon Sushi came up, we decided to see if freezing sushi is even possible. 

We end up discovering that not only freezing sushi is possible, as actually it can be really good, as the vegetable part of the Sushi seems to hold up pretty well, in comparison with the same type of hold up in fresh prepared and refrigerated sushi (next episode).

So basically there are 3 ways of making "prepared commercial sushi":

1- Daily fresh or just-made sushi in a restaurant or in a sushi house;

2- Fresh prepared and refrigerated sushi in supermarkets, or similar (at 4º to 6º C, and normally with 3 days maximum of expiry date);

3- Frozen sushi (at -5º to -30º C);

These 3 ways are equal for both vegan and non-vegan sushi, as what matters for us is the way that the vegetables react and hold up, specially the rice and the avocado. The good thing about freezing and deep-freezing is that it can be done right away after the sushi be made, so the losses of texture and taste are minimum.

This first video about this subject is very simple and direct, but the ideas of frozen sushi, frozen sushi packaging, and of a global frozen sushi product are all there, if we look at it from that perspective.

Hopping you like it then, reminding that a part of the the food in it is not vegan, but the other one that we need can be used and related.

Nevertheless, keep calm, think sushi, and make it vegan.

EPISODE 013 (Part 1):

"VEGAN SALMON SUSHI: A SKETCH-UP MIX & MATCH RECIPE"

As many recipes in Japanese cuisine are fish based, we decided to do a sketch-up recipe with some vegan fish products, and tried to mount a (maybe possibly good and tasty) mix & match combination for Vegan Salmon Sushi. 

As it is a very graphic collage, it doesn't need a very big description, except for:

- The sushi might need a generous amount of Vegan Salmon on the top, maybe a double layer, to give it a great delivery;

- As the Fysh Sauce has pineapple, the mix at this point is unpredictable, as it might end up tasting a little bit like Thai sushi;


- In order that placing some Gardein's "fish" inside the sushi doesn't end up maybe tasting like fried fish & chips, maybe it just needs to be de-frosted or thawed and the batter removed, cut in stripes, wrapped in some Vegan Salmon, and then just placed inside with ripe avocado slices, cucumber or zucchini, in order to give it just a kind of "vegan raw fish boost".


- Maybe to have some french fries and mayonnaise on the side, just in case?

The main point of this idea is just to show that it is no longer impossible to do vegan fish sushi without having real "fish", and that it might "do good or really good" even if facing for instance the normal Japanese fish sushi standards.

Also important is to understand is that at this point this is just a work in progress and a sketch-up recipe, since it can only be tested or done in North America and Canada. Maybe in the future it might also be possible to exist a commercial version of Frozen Vegan Salmon Sushi?

A collage poster made for White Day, the second day of the Japanese celebrations of Valentine's Day, where the boys or men choose now if they accept or not the girls appreciation, interest or declaration, and friendly or respectfully reciprocate either with a nice hand-made gift or with the gift they prefer. Once again, chocolate is normally present, as the sweet of the sweets or the best thing to say: "thank you" or "I love you...".

Valentine's Day and White day means chocolate days, and no doubt every year Japanese art, design, creativity and crafting are challenged to present their novelties and creations on these days. The only thing to say is that chocolate is way more versatile that we are normally used to, and that no doubt Japan is a few years ahead of all of us in the art of shaping and making chocolate. 

This video shows some of these beautiful creations, that no doubt can be a little bit inspiring to everyone.

EPISODE 12 (PART 1): "HAPPY VALENTINE'S DAY".

What? 

But Valentine's Day was not about one month ago?

Yes, but this year it is special for us, as some costumes in Japan are totally different from the rest of the World. Although in Japan as in some Asian neighbor countries Valentine's Day is celebrated at 14th February, it has a second part or a second day of celebration, called White day.
Also on Valentine's Day and on the contrary of the West, where by tradition are the boys and the men the ones that normally address their feelings to the feminine part, in Japan this costume is switched up or upside down, so it is typically done and observed by girls and women normally presenting chocolate gifts or cookies, that can be either store-bought or handmade (the most valued), usually to boys or men, as an expression of love, courtesy, or of social obligation or friendship.

On White Day then and at 14th of March the reverse of this happens, so the boys or men who received on Valentine's Day a honmei-choco ('chocolate of love') or a giri-choco ('courtesy chocolate') are expected to return the favor by giving or by retributing it with their own gifts.
This video explains how this tradition has began in Japan in the 1930's, and how its rules and etiquette are normally done nowadays.
