A TASTE OF JAPAN: THE ORIGINAL MINI-SERIES. 

EPISODE 05: "KONICHIWA"

474 years later, this video was the first contact we had with the actual city of Nagasaki, and its content made us remake all the line-up and structure of these mini-episodes.

The discovery of Japan and the first eastern contact with the Japanese archipelago was made by the island of Tanegashima, around 1542-43 AD, during the Portuguese period of Sea Discoveries. Tanegashima is located about 520 km by land at south of Nagasaki, that at that time was just a small village. With the passing of time, given its excellent geographical location, the increase of the sea traffic and trading with several nations bringing large ships, crews and vessels, Nagasaki became since then one the main trading centers and one the most strategic and important sea ports of Japan.

It was however the fact that Nagasaki kept some of the portuguese recipes to be representative of the food heritage of the city that caught our attention, and made us somehow reconnect and re-think the old trading routes of sugar, the old portuguese arts of cooking using sugar, and some present directions that the vegan and the raw-vegan foods are taking now.

A definitely unusual and awkward combination, one might say. 

Even so, and after giving it a little bit of thought, we took this opportunity and decided to bring back sugar and sugar cane to it's rightful place, at least in our opinion, that one being in fact that sugar should be in fact on the top of the sweetening chain. 

In the today's markets stating this not only raises multiple questions, as it might be highly polemical as it goes against some mainstreams, as well as in the so called "healthy spheres and gurus" it can be even considerate a total heresy and blasphemy... 

However, if we respect some of the basic principles of Nature, sugar can not only be absolutely harmless and healthy, as it is one the simplest ingredients for the human body not only to create a long term resistance, a strong and long lasting mental capacity, a natural self preservation and self preserved state, as to increase the natural human life and longevity. 

Confusing? No, maybe? Well, anyway, if you are not familiar with sugar, or if you don't know what sugar is, in its solid form sugar is... (to be continued).

We arrived to this blue planet about 800 years ago. We've been assigned to be working in Portugal and among portuguese since 1333, to help them develop and built caravels, to show them how to built precise flat maps and to read the stars, to train them in the art of sailing against the winds, to inspire them and their dreams that there were secrets, lands and things beyond imagination just after the place where the sky swallows the sea and eats the waters, that they should not fear the creatures and monsters that live under need the far black waters in the evening, and that these wouldn't come out of the sea to eat them alive...

I've been also having strange dreams about something that looks like 3 pancakes for a while, and the visions told me that they were a sort of a key to explain some of the most deepest mysteries of the Universe: why the Earth is flat, why the Sun always rises on that particular point, who decided to put so much salt in the Ocean, what invisible creatures make so many clouds and water without salt appear in the sky just in minutes, who blows the winds in so many directions, why are they so many shinning balloons moving in the sky..."

EPISODE 03 (EPILOGUE 1): 
"THE JAPANESE PANCAKES AND THE PARALLEL UNIVERSES".

Half way to a vegan solution:

Although this post is a vegan recipe for Dorayaki or Mikasa, it might be a good starting point for a hot cake type pancake mix like the one we want for making Hot cakes or Hottokēki (as in EPISODE 03). These are normally made using a cake type mix, which makes them thicker and fluffier. Dorayaki is also one of the most popular Japanese confectioneries, using Anko (sweet red bean paste) as the filling for making a "sandwich" with 2 sweet pancakes.

VEGAN DORAYAKI - original recipe from Jenné Claiborne

Ingredients (makes 8 small pancakes):

1/2 cup sifted cake flour or white flour
2 tbsp powdered sugar
2 tsp baking powder
1/3 cup soy milk
2 tbsp mirin or maple syrup
1/4 tsp soy sauce
Grape-seed, canola, vegetable, or coconut oil for the pan
1/2 cup red bean paste, preferably chunky (not chunky is also fine)

EPISODE 03: "THE JAPANESE PANCAKES AND THE FORBIDDEN PLEASURES".

If it's normal for an image to speak for a thousand words, then a good food image must probably speak for a thousand suggestions, a thousand temptations, a thousand tastes, a thousand delights, and a thousand full fillings. The worse part is when that image is not vegan, but even so is so pretty that knocks any normal vegan head off.

Nothing better then that just to have some cooking and veganising skills ready and handy for any occasion, just in case, and always keep them a little bit updated and sharped, specially if we decide to grab a bite on any of those beautiful Japanese pancakes or hotcakes. 

Well, anyway, sometimes one has to pass, so we had to decide that for the time being the best thing to do was just to cool off, and simply to go visit Japan...

PS / DIY's: as so far it looks like that this recipe has not been yet transformed into a vegan recipe, but since it is definitely a so beautiful and delicious piece of cake, nothing like to give it a try....

Also at amazon.co.uk, and after seeing so many food bags, we end up discovering a lot of pretty good and useful food boxes, all sizes, all types, all shapes, all colors, and all materials...

And once again in the middle of so much, all we had to do was to think practical, think vegan and think eco, and make it all budget fit and size fit, so we could make it all mix and match with the food bags...

But suddenly, Google told us that there was also something called Japanese pancakes...

It all started when we were visiting amazon.co.uk, looking for Bento boxes, and we end up discovering that there are quite a lot of pretty nice and useful food bags...


In the middle of so much, all we could do was how to think ethical, think vegan, think eco, think safe, and how to make it all mix and match...
